INGREDIENTS
2 cups fresh basil leaves 1 cup fresh baby spinach leaves 1/3 cup fresh Parmesan cheese, shredded 1/2 cup vegetable broth, low salt 2 Tablespoons extra virgin olive oil 1/4 cup fresh lemon juice 1 teaspoon lemon zest 2–3 cloves garlic, peeled Freshly ground pepper to taste PREPARATION Place all of the ingredients in your blender or food processor. Blend for 2–3 minutes, scraping sides to be sure everyone is included ;). Makes about 1/2 cup, enough for 2–3 dishes.
